No. The prize will still be there even if you are interested in a hobby
Why when my sim grew to the next age, (babies become toddlers, or preteen to be teenagers) did they not have any hobbies, were their hobbies previously gone?
This is because their hobbies can only be owned by a certain age. For example sim Preteen can do Hoby Ballet, but Teenager sim can't, because Hobby Balllet can only be done by sim with Preteen age.

Do I have to do all the hobbies even though my number of sim is not enough?
No. But I recommend to at least have a Woodworking Hobby, Fashion Designer Hobby, Figure Skating Hobby, and Aerobic Hobby. Make the sim at Level 6 on the hobby. So if you get a Timed Event, you don't have to waste time unlocking all collectibles, and you only need to collect them.
What's the benefit of doing a hobby?
Having a hobby in The Sims Freeplay will give you rewards in the form of Town Value, Simoleons, XP, LP when your sim level up, find new items, and collect all collectibles.
What is collectible?

It doesn't matter at all, because giving this collection is random. in my opinion, it's a hobby with options that don't take long. For example Fishing Hobby, instead of selecting the option "24 Hour Fishathon", prefer to select "Go fishing" or "unwind". Because if you are at the right level, you can get collectible faster
What is Lucky Spin?
Lucky Spin gives you the opportunity to get new items using LP. How:
a. Open the hobby tab
b. Click on the button with the LP symbol in the column where the item you want to get
c. By clicking the LP button, you will get the item rendom (random)
Is it profitable to use Lucky Spin?
I think it depends on the situation. If Speed up (accelerates) hobbies are cheaper than lucky spin, it's better to speed up. For example, Lucky Spin costs 6LP, while Speed up hobby costs 3LP, speeding up hobbies.
But if you find it difficult to get a Hobby Item, while you are running a Timed Hobby Event mission, in my opinion Lucky spin is a good choice
Why don't Karate and Ballet hobbies appear on the Hobby tab?
because the hobby doesn't have a Hobby Item
How to quickly level up?
The most appropriate way is to choose the longest option. For example Fihing Hobby, choose "24 Hour Fishathon". By choosing the longest option, you will be faster at the level.
